在江苏省最大的绿色天然无公害牧场的养殖下,花果山风鹅养成了老嫩适中、致密有嚼劲的肉质,再运用风鹅低盐嫩化技术经过63道工序加工而成,呈现皮薄肉嫩、腊香可口的风味。2015年,花果山风鹅被原国家质检总局批准实施地理标志产品保护。

Nestled in Jiangsu Province’s largest eco-friendly, pollution-free farm, Huaguoshan Feng’e (goose) has achieved a perfect balance of tender yet firm meat with a delightful chew. Utilizing a low-salt tenderizing technique and crafted through 63 meticulous steps, it boasts a delectable flavour with thin skin and succulent meat, complemented by an aromatic cured essence.

🍽️ 云雾茶 Yunwu Tea

连云港云雾茶产自连云港云台山一带,与南京雨花茶、太湖碧螺春同为江苏三大名茶。连云港云雾茶的冲泡方式也与普通茶叶有不同之处,沏茶时,要先往茶叶里倒半杯开水,这时的茶叶就舒展开来,如新叶般翠绿。接着再加二遍水,这时的茶叶便如团花簇簇,茵茵攒动。冲泡好的云雾茶呈现清透黄绿的色泽,滋味香醇,清香沁人心脾。续水时也不要等喝干了再续水,而是要在杯子中的水还剩下四分之一的水时就续水,这样就算多次冲泡也不减醇香。

Lianyungang Yunwu Tea, sourced from the Yuntai Mountain region of Lianyungang, ranks among Jiangsu’s top three teas, alongside Nanjing Yuhua Tea and Taihu Biluochun. Its brewing process is distinct from typical teas. Begin by pouring half a cup of boiling water over the tea leaves to let them unfurl and reveal their vibrant, fresh-green colour. Then, add two more rounds of water. As the tea leaves open up, they will form clusters resembling blooming flowers, adding a lush, dynamic visual appeal. When brewed correctly, Yunwu Tea exhibits a clear, yellow-green hue and offers a rich, aromatic taste with a refreshing, invigorating fragrance. To preserve its full flavour, refill the cup when a quarter of the water remains, rather than waiting until it’s empty, ensuring the tea’s richness endures through multiple infusions.

🍽️ 清蒸梭子蟹 Steamed Blue Crab

秋季,正是蟹肥菊黄的季节。每年8月到11月份的梭子蟹是最鲜美肥大的,无需过多调味,只上锅清蒸,便是无上的美味。轻轻掰开色泽艳丽的蟹壳,蟹黄丰盈饱满,金黄诱人,散发出浓郁的鲜香;蟹肉洁白如玉,入口细嫩而清甜,二者相加,在舌尖上绽放出极致的鲜甜滋味。再调制一碟姜醋汁,提升蟹肉的鲜味的同时又去除了海产品特有的腥味,每一口都是海洋的恩赐。

🍽️ 灌云豆丹 Guanyun DanBean

豆丹,也叫豆虫,因以豆科植物为食而得名,外形与蚕虫相似。豆丹的使用方式是将豆丹溺死后用擀面杖将豆丹肉从豆丹皮中挤出来,再用水清洗残留在豆丹肉上的粪便或内脏汁液,呈现出白中带绿的豆丹肉。烹制成熟的灌云豆丹,肉质紧实而细嫩,具有鲜甜的豆香味。豆丹不仅口感独特,还富含高蛋白、低脂肪、丰富的氨基酸和多种微量元素,具有极高的营养价值,是灌云不可错过的特色美味。

DanBean, or bean worms, get their name from their diet of leguminous plants and have a similar appearance to silkworms. To prepare them, the worms are first drowned, then their meat is extracted using a rolling pin, and any remaining waste or internal fluids are washed away. The result is a white bean worm meat with a touch of green. When cooked, Guanyun’s bean worms are prized for their firm, tender texture and a delightful, sweet bean flavour.
