Six types of special pastries of Jiangnan water towns

People who live in water towns like to make sweet pastries. The sweetness of pastries always exudes in the air.

1. Qingtuan

This must be the deepest obsession of the children who grew up in the water towns. Qingtuan is soft and chewy, the fragrance of wormwood blends into the bean paste which emits light and lingering flavour.

2. Begonia cake

With the crispy caramel on the top, it is one of the famous pastries in the water town. It’s named begonia cake because it looks like the begonia flower. The crust is crispy and chewy. Only need one bite, it will warm your winter.

3. Fu’an Mahua

This is the connection between Shen Wansan and Fu’an Bridge. At the beginning of the Ming Dynasty, Shen travelled to Southeast Asia. He brought the Shen family famous Mahua as his main food. Then, it was named Fu’an Mahua after Shen has given Mahua to the people on the banks of the Fu’an Bridge.

4. Dingsheng Cake

People of the water town make cakes into fixed patterns, which means victory. Dingsheng cakes have various types, mostly filled with red bean paste, embellish with red dates or red and green processed fruit.

5. Shoe Sole Pastry

It looks like a “shoe sole”, made with carefully selected ingredients and exquisite technique. It is very thin, tastes crunchy, sweet, and salty. The scallion oil inside brings out the tastes of sweet and slightly salty.
